Kube and maruvaai mean cockles in Konkani and Tulu respectively and mutlim and pundi mean rice dumplings in Konkani and Tulu. This yummy, creamy, and spicy dish is a thick gravy packed with rice dumplings and cockles. The ingredients that typically go into the gravy are grated coconut, coconut milk, long red chillies, garlic, pepper, coriander seeds, tamarind, and other spices. You must taste this dish just to experience the unique blend of mutlim, kube and gravy. It is eaten for either lunch, dinner, or both. This food item of Mangalore is not very easy to come by, even in seafood restaurants. The best way to get some of this Mangalorean food is to ask your Mangalorean friend, relative or host to cook you some. The mulim/pundi are vegan and taste great as is so, you can even eat them plain.
12. Pathrode: Mangalorean Version Of Gujarati Patra
This Mangalorean food item is similar to the Gujarati patra, however, the pathrode is made with a coconut and rice batter mixed with kesu yele or colocasia leaves. The Gujarati patra is made with a besan (gram flour) stuffing, however, the taste of these two dishes are almost the same due to the colocasia leaves. Pathrode can be enjoyed either as a snack or had as a side dish for lunch or dinner. To make this dish, tender colocasia leaves, that grow in most Mangalorean backyards, are smeared with spicy and tangy masala and these are then stacked one on top the other. The leaves are then steamed. It is then cut up and can be eaten plain, fried, or put in a spicy gravy. One of the best and most authentic of local dishes, each version of this dish is worth trying at least once. One thing to remember is that not all varieties of colocasia leaves are good for making this dish as the wrong variety can be an allergen and cause itching inside the mouth and throat. This dish is not readily available in restaurants and can only be prepared when the leaves are in season, which is around the monsoons. It is also a naturally vegan dish. 13. Gassi: A Thick Coconut-based Delight
An all-time local favourite, it is one of the best traditional dishes. Gassi is part of traditional Mangalorean cuisine with a coconut-based red curry. It is usually savoured with roti, rice or the traditional neer dosa or even kori roti. The gassi is prepared with a variety of ingredients as its central delicacy, can be kori (chicken) gassi, channa dal (chickpeas) gassi, fish gassi or paneer (cottage cheese) gassi.
14. Kadale Manoli: A Famous Festive Meal
The Tulu word kadale or kadle means black chickpeas and manoli is ivy gourd. This traditional Manglorean dish is a combination of legume and vegetable and is prepared in a coarse coconut based dry gravy. Usually prepared during south Indian festivals such as Ganesh Chaturthi, kadale manoli can be eaten either with a side such as rice or dosa or eaten just like that as well. It is a pakoda made from jackfruit (tender jackfruit to ripe jackfruit) and can be served as munchooris with chopped (& fried) garlic, chilli, coriander, onions & capsicum in sauce (either soy or tomato). The fritters (pakodas) are made by dipping thinly sliced jackfruit pieces in a rich, flavourful batter and then deep-frying them. This is one of the best, most unique type of fritter to eat.

Mangalorean cuisine is loved by anyone who has been to or lived in the city and tasted the food. People who have been to Mangalore even for a short while, leave with at least one Mangalorean food item added to their list of favourite foods. This is because, while most Mangalore food is spicy, there are some that are slightly less spicy, so there is something for everyone. It is among the best and most unique cuisines. Not all Mangalore dishes are easy to make as some require a certain knack or knowledge that comes from living in Mangalore and being part of its culture for years.
